Hakata Gensuke Carlton

Hakata Gensuke is a Fukuoka-style tonkotsu ramen specialist with several Melbourne shops; the Carlton store on Lygon Street runs a 'Yatai' menu themed on Fukuoka's open-air food stands. Bowls are built on a pork broth with homemade thin noodles and pork cha-shu, with black garlic and spicy 'God Fire' versions alongside a clear shoyu broth, plus gyoza, karaage and rice sides.
